This pasta dish is easy, light and refreshing … oh, and eeeeeasy to fix!

Olive Oil & Balsamic Pasta


1 package whole grain thin spaghetti

10 cherry tomatoes, cut

Fresh basil leaves about 1/4 c or as much as you like

1/2 c Buffalo Mozzarella (optional; omit to make vegan)

little under 1/4 c of balsamic vinegar

1/4 c Olive Oil

salt, pepper and Italian Seasoning to taste


Cook pasta according to directions and once drained transfer to a big bowl. Add all ingredients and stir. The dish will be warm, and if you want it hotter, just heat it up. It’s also pretty delish cold. Tonight I added a little tomato sauce and it was pretty tasty.
