My dad used to make this for us on the weekends, yummmmmy!
I’ve altered it a bit to make it low fat. This is a perfect snack, or side dish! The recipe can be altered for more people. I’m the only one in my house who eats this, so I use only one can of beans. The more you want to feed, the more beans you add.
Ingredients & Directions
1 cn. Refried Beans mixed with about a 1/4 c. of salsa (Again, if you add more beans add more salsa in this ratio) — I like to use vegetarian refried beans; Stir beans and salsa together and layer on the bottom of your dish.
Sour Cream — I use Toffutti Sour Cream or low fat sour cream; layer on top of beans
Shredded Cheddar Cheese — You can use vegan cheese if you like; sprinkle on top of sour cream
Onion Tops — Cut and sprinkle on top of sour cream
Tomatoes — I use romas; place on top of sour cream
Black Olives — I don’t like ’em, but some people do; place on top of sour cream
Chill for a little while in the fridge, then enjoy with chips!
